Freekeh, also known as green cracked wheat. It is an ancient Palestinian tradition where the wheat is harvested early while in the milky stage, at the peak of its nutrition, flame-roasted, sun-dried and then crushed. Canaan farmers grow landrace wheat varieties that have been cultivated and passed down through generations in Palestine. Freekeh compares well to other ancient grains that are high in nutrient content like quinoa and wild rice delivering more in fiber and in protein. Freekeh has a unique hearty texture for a grain when prepared like rice or soup. Canaan freekeh is flavorful with hints of smoky notes. This comfort food will leave you feeling warm and at home.
