Farmers across Palestine harvest their olives in small batches and bring them to press from the beginning of the olive harvest in October through the end in December. Each batch carries its own distinctive flavor and when combined creates a special blend for the season that becomes their family’s signature olive oil. Canaan honors this age-old tradition by collecting olive oil from the spicy bite of the early harvest to the mild finish toward the end of the harvest. Jenin is our signature cold pressed olive oil collected from small-scale farmers who live in villages surrounding the Palestinian city of Jenin. 3. **Handcrafted Heirlooms**: Hand-rolled Maftoul and flame-roasted Freekeh produced by women's cooperatives using heirloom landrace wheat. This is the preservation of our ancestral flavors against the threat of erasure.
